Dario Cecchini became known worldwide when CNN broadcast the funeral he held for a cut of beef. His shop in Panzano is still a butcher's, eight generations in; the restaurants grew around it later. I'd suggest lunch rather than dinner: you share a long table with people from all over, courses keep arriving, and Dario works the room explaining what you're eating. It's a lively, crowded place — if you're after a quiet dinner, this may feel a little busy.
